GUM ARABIC Gum Arabic is a dried exudate obtained from the stems and branches of Acacia Senegal (L.) Willdenow or closely related species of Acacia (fam. Leguminosae). A. Seyal is a closely related species. Gum Arabic consists mainly of high-molecular weight polysaccharides and their calcium, magnesium, and potassium salts, which on hydrolysis yield arabinose, galactose, rhamnose, and glucuronic acid. Items of commerce may contain extraneous materials such as sand and pieces of bark, which must be removed before use in food. Gum Arabic from A. seyal is sometimes referred to as gum talha.

THE QUALITIES OF GUM ARABIC
(1) a natural substance.
(2) It has no color, no taste and no smell that is when it is added to any kind of substance it does not change its qualities but it adds other qualities to it to improve it.
(3) If readily dissolves in water
(4) It is a substance which oozes out of a tree so it helps in mixing oils with other liquids of different densities or in mixing these liquids with one another to give a homogeneous liquid. This quality is used in making soft drinks like pepsi cola, confectionaries and the substances which contain a high percentage of oils.
(5) A stabilzing agent for flavor and aroma. That is, adding it to a substance makes that substance keep its flavor and aroma for a longer period, particularly when these aromas are volatile and evaporate when exposed to open air or when heated
(6) Gum Arabic prevents sugar crystallization. We notice that in many kinds of substances which contains a saturated sugar solution, the sugar crystallizes in cold temperature, so a little Gum Arabic should be added to prevent that crystallization.
(7) Gum Arabic has been scientifically proven to be free from any substances which harm ones health, and the Food & Drug Adminstration (FDA) declared that taking any amount of the gum daily does not harm ones health at all.
(8) If you take 25 grams of Gum Arabic daily tends to reduce the percentage of cholestrol in the blood.
(9) It gives low calories, so it is suitable for diabetics and the ones who follow a regime.
(10)It is not affectedby microbes when mixed in normal conditions & has unlimited shelf life.
